Backing up Teltonika Routers, best practice

Hi all,
We've just started using Teltonika RutOS devices. (RUTX11 for example)
These are OpenWRT based devices.
I've noticed that the config backup is the output from a series of config files.
One of the files that is catted out and backed up is this one: /etc/default-config/config.tar.gz
However, this is a binary file, so the output is not text.
Because of this, we're getting a new backup every day.
Is this the correct way to backup these devices? and if so, can we exclude this file?
